The cider, from which the brandy is produced, is obtained from selected apples grown in the region. The cider is left to ferment for about three months and is then heated and distilled twice in copper stills following the most traditional method. This exceptional brandy that results from the processing is left to age in oak-wood barrels, from 36 months to several years, under the cellar master's continued control.
